Smoky Bacon Caesar

Smoky Bacon Caesar

My first thought when designing hangover cures was, naturally, BACON! So of course I had to put together a Bacon Caesar. First we crush up crispy bacon with plenty of black pepper and a little sea salt to create a rim with a smoky kick. Vodka and Clamato are poured over ice in the traditional style, but we add a good shake of chipotle tabasco to the usual spices. The whole thing is topped off with a rasher of extra crispy bacon and a spicy pickled bean. If that doesn’t cure your hangover, I don’t think anything will!

For the dirty martini lover, we have created a Dirty Caesar. I guess some people are uncomfortable drinking martinis in the morning? This is a classic Caesar with gin replacing the vodka, a healthy splash of olive brine to season and a packed skewer of olives to garnish. Using gin in the Caesar adds an herbaceous note, bringing out the savoury side of the tomato. Tomato and olive are a classic Provencal pairing; I’m surprised we didn’t stumble upon this one earlier!

The Parliamentary Caesar is fast becoming a favorite! It was created almost by accident in an attempt to make a Caesar for one of our staff members with a gluten allergy. Most people don’t realize that Worcestershire sauce, which is part of the seasoning for Caesars, contains gluten. Her Caesar wasn’t quite right without it, so we went in search for a replacement. A squeeze of HP sauce was a delicious replacement, an improvement even! A little cucumber was added to garnish as homage to the British classic, the cucumber tea sandwich. The sweet rich flavor of HP sauce adds to the depth of the tomato flavor and the refreshing cucumber brings a crisp contrast to the party. I was a little sceptical at first, but one sip and I’m hooked! I don’t think I can drink a Caesar without HP sauce from now on!

JF’s Yellow Caesar

Have you ever seen a Yellow Caesar before? Chef Jean-Francis came up with a brilliant spin on the great Canadian Caesar inspired by the Mediterranean chilled tomato soup, gazpacho. He is making our own version of Clamato, with yellow tomatoes, peppers, cucumber, and clam nectar. Spike that with vodka and garnish with piparras peppers and a wedge of yellow tomato and you have the most refreshing version of a Caesar ever made!

West Coast Caesar

Last but certainly not least on our Caesar list, we have something to satisfy the horseradish lovers! The West Coast Caesar is kicked up with a generous amount of horseradish and a tangy lemon pepper rim. Garnished with a smoked salmon rosette and cucumber slice, this is a truly Canadian cocktail!

I have also added a handful of new Mimosas to the brunch menu and they are all refreshing and delicious, but I’ll just tell you about the one that stole my heart. I can truly say I’m addicted to this drink, it’s just so tasty! I called it Pink Lemonade. Because it tastes exactly like pink lemonade! It’s quite simple really, a glass of bubbly (we use a great French bubble, Veuve du Vernay) topped up with SanPellegrino Limonata and a splash of Pomegranate Liqueur. The mix is just sweet enough, but not too much. It tastes exactly like I remember pink lemonade tasting as a child, which begs the question; was my Mom putting sparkling wine in my drinks?

Speaking of non-alcoholic beverages, we have a great selection of sparkling drinks from SanPellegrino and all of them are quite tasty! Perfect for your children or your designated driver! My current favorite is the Pompelmo, their version of grapefruit. It’s the happy medium between fresh squeeze grapefruit juice and a Fresca. It also tastes delicious with booze added to it!
